Food & Beyond began by sharpening the café’s identity. We refined the name “Zoya Corner” to evoke a cosy neighbourhood feel and devised a visual system—logo, sun-washed ochre and charcoal palette, handwritten headline typeface, and an icon set—that could flow effortlessly from shop-front signage to social feeds. Brand guidelines captured the tone (playful yet polished, bilingual Arabic–English) and extended to packaging, merchandise, and in-store way-finding so every guest touchpoint told the same warm, modern story.

Menu Engineering & Creation
Working with the owner-chef, we defined a Levant-leaning comfort menu that could carry breakfast, lunch, and dinner without overburdening the line. Forty-two dishes were costed to land at—or below—a 28 % food-cost target, with a plant-forward skew that met Kuwait’s growing demand for lighter options. Dish sequencing was mapped to a single hot pass and two prep stations, ensuring ticket times stay under seven minutes even at peak. Supplier negotiations shaved eight percent off key ingredients while securing a signature coffee roast exclusive to Zoya Corner.

SOPs & Kitchen Manuals
To lock consistency into every shift, we produced a full suite of standard-operating procedures: gram-for-gram recipes, prep/hold time-temperature charts, plating diagrams, allergen flags, and HACCP logs compliant with Kuwait Municipality rules. Front-of-house scripts covered greetings, table-turn goals, and recovery steps for guest issues. Digital checklists, loaded on tablets beside each station, keep compliance transparent and audit-ready.

POS & Systems Setup
After comparing local options, we rolled out Toast® cloud POS with Arabic UI, QR table ordering, and kitchen-display screens. Menu trees and modifier logic mirrored the engineered menu, reducing order entry errors to under one percent in the first month. Loyalty hooks and SMS receipts were activated from day one, giving the marketing team instant data on visit frequency and guest spend.

Inventory Management & Food Costing
MarketMan® was integrated with the POS to synchronise real-time depletion and automate low-stock alerts. We built a dynamic par-level model—linked to weekday traffic forecasts—that cut inventory holding by 14 % without risking outages. Weekly theoretical-versus-actual variance audits now surface shrinkage early; it has settled under one percent, compared with a typical three to five percent in similar concepts.

Financial Projections & Analysis
Before a single dinar was spent on fit-out, we delivered a three-scenario P&L, cash-flow model, and break-even sensitivity analysis covering rent, labour, and COGS swings. Post-launch, owners view a live KPI dashboard—average ticket, covers, labour ratio—on their phones. The first quarterly review package highlighted a lunch-daypart gap; introducing a midweek combo lifted noon transactions 18 % and kept the café on track to hit its year-one EBITDA target.
